

Green Chiles are field de-stemmed, washed, roasted, steam peeled, and diced into 3/8″ x 3/8″ pieces. The chiles are packed in a can, topped with a brine, acidified, sealed and thermally processed to achieve a commercially sterile product.

The product is then cooled quickly to provide a commercially sterile finished product.

The product is then cooled as quickly as possible to provide a firm-textured commercially sterile finished product.
