Spicy Pork Meatballs in Jalapeño Tomato Sauce

Ingredients

  • 1 pound ground pork
  • 1 tsp garlic
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, shredded
  • 2 tbsp cilantro, chopped
  • 1 tsp cumin
  • 1 large egg, beaten
  • 4 oz Rio Luna™ Diced Jalapeños
  • Jalapeño Tomato Sauce
  • 1 tbsp canola oil
  • 1 small onion, diced
  • 2 tsp garlic, minced
  • 4 oz Rio Luna™ Diced Jalapeños
  • 14 oz tomato sauce
  • 14 oz tomatillo, pureed
  • 1 tsp cumin
  • 1 tbsp cilantro, additional for garnish
  • Salt and pepper, to taste

Directions

  1. In a large bowl combine pork, garlic, cheeses, cilantro, cumin, egg and Rio Luna Jalapeños. Blend will be wet. Form into 16 meatballs.
  2. Place meatballs on line sheet pan. Heat to 400 degrees and cook for approximately 20 minutes.
  3. In a large sauté pan, heat oil and sauté onions for 1-2 minutes. Add garlic and cook for 30 seconds, then add Rio Luna Jalapeños, tomato sauce, tomatillos, cumin and cilantro. Simmer on low for 10 minutes and season with salt and pepper.
  4. Serve with warm sauce and garnish with fresh cilantro.
