Ingredients
- 1 pound ground pork
- 1 tsp garlic
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, shredded
- 2 tbsp cilantro, chopped
- 1 tsp cumin
- 1 large egg, beaten
- 4 oz Rio Luna™ Diced Jalapeños
- Jalapeño Tomato Sauce
- 1 tbsp canola oil
- 1 small onion, diced
- 2 tsp garlic, minced
- 4 oz Rio Luna™ Diced Jalapeños
- 14 oz tomato sauce
- 14 oz tomatillo, pureed
- 1 tsp cumin
- 1 tbsp cilantro, additional for garnish
- Salt and pepper, to taste
Directions
- In a large bowl combine pork, garlic, cheeses, cilantro, cumin, egg and Rio Luna Jalapeños. Blend will be wet. Form into 16 meatballs.
- Place meatballs on line sheet pan. Heat to 400 degrees and cook for approximately 20 minutes.
- In a large sauté pan, heat oil and sauté onions for 1-2 minutes. Add garlic and cook for 30 seconds, then add Rio Luna Jalapeños, tomato sauce, tomatillos, cumin and cilantro. Simmer on low for 10 minutes and season with salt and pepper.
- Serve with warm sauce and garnish with fresh cilantro.
